◆What is raw honey?
Raw honey is unheated and additive-free honey, squeezed only after the nectar collected by bees has reached a sugar concentration of 78% or higher. In Japan, 92% of honey is heat-treated or processed with additives, making raw honey, which accounts for less than 10%, a rare commodity. It is rich in nutrients and has a rich flavor with a clean aftertaste because the lactic acid bacteria and enzymes are alive. Once you taste raw honey, you can't go back to heated honey.

◆What does the Japanese pepper and Aralia elata multi-flower honey taste like?
This honey is harvested in Shimane Prefecture. The beekeepers strive to practice beekeeping that is as close to nature as possible, without using pesticides, even if it requires extra effort. Japanese pepper and Aralia elata are the main floral sources. It has a gentle sweetness with a slightly spicy kick.
