These are graded as premium by JA, but may include some that are still growing, resulting in size variations. They are tender and ready to eat!

These are freshly picked sansho peppers from the mountains of Kyoto Prefecture.
Each pepper is hand-picked from wild sansho trees in the mountains,
and is a rare item with decreasing harvest volume year by year.
We expect to have only about 3kg remaining.

?Tsukudani (simmered sansho), Chirimen Sansho (sansho with dried sardines)
?Soy-marinated sansho peppers
?Freeze and grate to use as powdered sansho

▼ Pre-processing Method
Boil in hot water with a pinch of salt for 2-3 minutes,
then rinse in cold water to remove bitterness.
For long-term storage, freezing is recommended
(flavor can be preserved for about half a year).
