Kitchen Knife Deba Miyabun Refurbished 6281

Deba knife. Blade length 16.1cm, weight 265g. The spine is approximately 9.5mm thick near the heel. The Miya character is faded, but the previous handle was engraved with Miya-bun. This is a brand from Miyabun, whose main store is located in Sapporo, Hokkaido. Although it is long and narrow, it is very thick, so it is not an Ai-deba. It is unclear whether it was originally long and narrow or became so through sharpening, but the quality of the material is evident. There is little to no ura-suki (hollow grind). The handle has been replaced with a new one and is still usable for a long time. It has been thoroughly sharpened, honed, and polished.
