Knife Ajikiri Matsubara Refurbished 6250
Ajikiri knife with a blade length of 10.7cm and weighing 70g. The spine is approximately 3.0mm thick near the heel. It is inscribed with Matsubara, which likely refers to the Matsubara knives from Omura City, Nagasaki Prefecture, a traditional craft of Nagasaki. The tradition dates back to 1474, seemingly originating during the ōnin War. This appears to be a double-edged laminated knife. Both the sandwiched steel and the surrounding soft iron are not stainless steel, so please be cautious of rust. Knife oil is essential. It was originally finished with a kuro-uchi (blacksmith's finish), but the surface beneath it is uneven, not due to rust. The handle has been replaced with a new one and is still usable for a considerable time. It has been thoroughly sharpened, honed, and polished.
