Description
Deba knife with a steel blade and wooden handle, includes a wooden tray.

- Type: Deba knife
- Blade Material: Steel
- Handle Material: Wood

This is a traditional Japanese Deba knife (Deba Bocho). It is primarily used for filleting fish, cutting through bones, and decapitating fish. Reading and Meaning of the Engraving: The characters engraved on the blade read 登録 本長 特選. 登録 (Touroku): Indicates that it is a legitimately registered brand. 本長 (Honcho): This is the brand name of the knife or the name of the blacksmith's workshop. 特選 (Tokusen): Represents the product's grade, meaning that particularly selected high-quality steel (Hagane) has been used from that workshop. Condition and Maintenance: Traditional Japanese knives are excellent in sharpness and ease of sharpening, but they are made of carbon steel, which is prone to rusting. Rust Removal and Sharpening: Currently, the blade surface shows blackening due to oxidation, rust, and signs of use. By re-sharpening with a rust remover (like a rust eraser) or a low-grit whetstone (coarse/medium grit), you can restore its shine and sharp cutting edge. Daily Care: After use, wash with detergent, rinse with hot water, and then completely dry with a dry cloth. For long-term storage, applying a thin layer of camellia oil for knives can prevent rust.
