This is a special knife for left-handed use, made in multiples at the request of a customer.
Bamboo is easy to cut along the grain, but very hard when cutting against the grain.
Only a blade made of robust steel can cut it without chipping immediately.

Although it may not look refined, this knife uses high-carbon steel, making it hard enough to withstand bamboo and very sharp.
The blade angle is also slightly more obtuse than a standard kiridashi, optimized for bamboo.
