The top surface is polished to a high gloss finish, and the four corners are cut into an R-shape. The top and bottom edges are chamfered to prevent injury. The shine is achieved through polishing, not coating, so you can use it with confidence as a pastry board.
Natural marble has high thermal conductivity and low specific heat capacity, making it cool to the touch. This helps suppress the temperature rise of dough, making it less sticky.
