Description
Thank you for viewing.

This is a Banko ware clay pot (tagine pot, waterless cooking pot) from Yokkaichi City, Mie Prefecture. This clay pot is suitable for waterless cooking, a method that utilizes the natural moisture and oils contained in ingredients like vegetables without adding water.

Originally designed for making tagine dishes, which originated in Morocco where water is precious, this type of pot is also very popular in Japan.
It is characterized by its ability to cook ingredients with minimal added moisture, concentrating the umami flavors and allowing for delicious pot dishes to be prepared in a short time. Another feature is that the lid does not have a steam vent. (The lid is slightly heavier than a regular clay pot.)

The following is from Wikipedia:
The reason for this shape is to create a cooler area inside the lid. The narrow space at the top of the conical lid makes convection difficult, and it is further cooled by the air as it is far from the bottom of the tagine pot. As a result, when the tagine pot is heated, the steam released from the ingredients inside is cooled at the top of the cold lid, condenses, and falls back onto the ingredients in the form of water droplets. This allows for steaming using only the moisture contained in the ingredients. In Morocco, where many areas are arid, drinking water was extremely precious. It is said that due to these environmental factors, the tagine pot, which can cook using only the moisture from the ingredients, was developed out of necessity.

This tagine pot is a pioneer among domestically produced tagine pots. It is said that a larger lid (taller) like this one allows the ingredients' moisture to cool more effectively, enabling quicker preparation of delicious dishes.
